This recipe is gluten-free & can also be vegan friendly by using non-dairy chocolate chips.

Peanut Butter Banana Cookie Recipe

We are using our Nana Flakes® as an egg substitute in this recipe.

Makes about 20-22 cookies
Bake at 350 Degrees for 9-12 minutes – Time may vary depending on oven.

Ingredients:

  • 1 tsp. vanilla extract
  • 1 tsp. baking Soda
  • 2 tbsp. Nana Flakes
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 cup peanut butter
  • 1/2 cup chocolate chips

Directions:

  • Mix 2 tbsp. of Nana Flakes® with 6 tbsp. of cold water. Let the mixture thicken up, about 5 minutes, before incorporating it into the batter.
  • Combine sugar, brown sugar, and baking soda in a bowl.
  • Beat in the peanut butter, Nana Flakes®, and vanilla extract.
  • Stir in chocolate chips.
  • Roll into individual balls on parchment-lined baking sheets and bake for 9-12 minutes.
  • Cool on baking sheets for 5 minutes before transferring to a cooling rack. Please note, these cookies are more delicate so allow them to rest & firm up before transferring to wire rack.
