Easy Enchiladas

Easy Enchiladas

Ingredients:

  • 1 Bag of Taco Mix
  • 1 & ¼ cup of refried beans
  • 1 & ¼ cup of cooked rice
  • ¾ cup of Monterey Jack cheese
  • 1 15oz can of Enchilada sauce
  • 5 corn tortillas

Instructions:

  1. Prepare Taco Mix according to package directions.
  2. Add 1/4 cup of the cheese and mix well.
  3. Warm tortillas according to package directions.
  4. Roll each tortilla with 2 Tablespoons of Taco Mix and 1/4 cup of cooked rice.
  5. Place rolled enchiladas in a greased baking dish.
  6. Top enchiladas with sauce and sprinkle with remaining cheese.
  7. Bake at 350° F for 50 minutes or until sauce is hot and bubbly.
