Soy Pancakes made with Soy Flour

Ingredients:

  • 1 cup of Soy Flour
  • 2 & ¾ Cup of all purpose flour
  • 1 & ½ tsp of salt
  • 3 TBSP of baking powder
  • 3 cups of Skim Milk
  • 6 TBSP of Soy Bean Oil
  • 3 eggs

Directions:

  1. Mix all ingredients together until moistened
  2. Add extra milk for thinner pancakes (optional)
  3. Spray griddle with non-stick cooking spray
  4. Heat the griddle and pour about ¼ of a cup of batter onto the griddle for each pancake (may be larger for larger sized pancakes)

Note: this recipe yields approximately 32 pancakes.

  • Low fat whipped cream
  • Fruit
